Strawberry poppyseed pancakes
Fluffy vegan pancakes made with only 7 ingredients. They are vegan, gluten-free and refined sugar free.
- 1 cup gluten free all purpose flour
- 2 tbsp unrefined sugar
- 1 tbsp baking powder
- 1 tbsp poppyseed
- 1 cup unsweetened soy milk
- 1 tbsp apple cider vinegar
- handful of strawberry, diced
In a large bowl combine dry ingredients, pour in milk and vinegar and mix well. Gently fold in diced strawberry.
Heat coconut oil in a pan. Pour or scoop the batter into pan (approximately 1/4 cup) and cook for a couple of minutes until it starts to bubble. Then flip and cook through for another 2-3 minutes. Repeat until all the batter is used.
Serve warm with choice of fruits and syrup. Enjoy.
