If you’ve been following me on Instagram for awhile, you know how much I love small-batch baking and this recipe makes ONE chocolate lava cake, yes, cake for one. You can double the recipe if you’re making for 2.
I baked this cake earlier today and it was just for my hubby who has a soft spot for chocolate molten cake. He loves this cake, it’s the only dessert that he would ask me to bake for him like.. everyday.
Vegan chocolate molten lava cake.
Decadent chocolate molten lava cake. The easiest, the simplest, quick to make and can be ready in less than 20 minuets with just 6 ingredients. It’s vegan, gluten-free and sugar free option.
- 1/4 cup gluten-free all purpose flour or regular flour
- 1 tbsp unrefined sugar optional*
- 2 tbsp cocoa powder
- 2 flaxeggs (2 tbsp flaxseed meal + 6 tbsp water)
- 2 tbsp coconut oil
- 20g your favourite dairy-free dark chocolate
Preheat oven to 180 celsius.
Grease a ramekin well and place on a baking tray.
In a medium bowl, combine flax eggs, coconut oil, sugar, cocoa powder. Add in flour and stir until combined
Pour mixture into prepared ramekin, pop 20g square dark chocolate into the centre of the mixture.
Bake for 12 minutes, remove from the oven and let it cool about 5 minutes before serving. To serve, place a plate on top of the ramekin carefully invert the cake onto the plate. Let it sit for 10 seconds, then lift up the serving plates.
