They are perfect for packing in little ones’ lunch boxes, it makes an excellent afternoon snack or you can pair with a cup of coffee, milk for a quick and healthy start to your day.

Almond coconut cookies (vegan, gluten-free & refined sugar-free)
Crispy outside and soft centre cookies loaded with healthy ingredients. Easy one bowl recipe, takes less than 20 minutes to make.
Ingredients
- 1 1/2 cups almond meal
- 1/4 cup coconut flour
- 1/3 cup coconut oil
- 1/4 cup maple syrup
- 1/2 tsp baking soda
- 1 tsp vanilla bean extract
- 1/2 tsp salt
Instructions

Preheat oven to 180 celsius.

In a large bowl, mix together all the ingredients.

Using a small cookie scoop, shape the dough into 12 1-inch balls and place cookies on baking sheet lined with parchment paper, or silicone mat. Flatten the cookie dough balls.

Bake for 12-15 minutes, or until golden brown. The cookies will be quite fragile as they come out of the oven, so cool for about 5 minutes on the baking sheets, and then transfer onto wire rack to cool completely.
