These waffles have the crisp crust and fluffy interior like traditional waffles, but the sweet potatoes provide a deeper and more flavour. So delicious.
I served these waffles with vegan hollandaise sauce and sliced avocado (my favourite combo), but they’re also great on their own with maybe a drizzle of syrup.
The vegan hollandaise.
The traditional hollandaise is a creamy sauce of melted butter, egg yolks and vinegar. It was yolky and creamy. It is well known as a key ingredient of egg benedict and is often served on vegetables such as steamed asparagus.
And the vegan hollandaise sauce is a lot easier, healthier and yummier! It’s absolutely delicious with a sinful richness that doesn’t even taste healthy although it really is.
This hollandaise is great with almost everything. I love to serve it with steamed or roasted asparagus, potatoes and sliced avocado.

Sweet potato waffles with vegan hollandaise sauce
These sweet potato waffles have the crisp crust and fluffy interior like traditional waffles, but the sweet potatoes provide a deeper and more flavour. They are great with the vegan hollandaise sauce and sliced avocado.
Ingredients
Sweet potato waffles
- 200g sweet potatoes cooked
- 1 cup spelt flour
- 1/2 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsweetened soy milk
- 1 tbsp coconut oil
Hollandaise sauce
- 1/2 cup cashews soaked
- 1/2 cup unsweetened soy milk
- 1/2 tbsp mustard
- 1 tbsp apple cider vinegar
- 1 tbsp nutritional yeast
- 1 tbsp maple syrup
- 1/2 tsp turmeric
- 1/2 tsp smoked paprika
- 1 tsp salt
Instructions
Make the hollandaise sauce

Soak cashews with warn water for 2 hours or overnight. Drain and rinse. Place the cashews in a blender with the rest of the ingredients. Blend until smooth. (add a bit more milk, If you desire a thinner sauce). Set aside.
Sweet potato waffles

Preheat waffle iron. Place all of the ingredients into a food processor, blending until smooth and fully combined.

Spoon batter into your preheated waffle iron and cook according to your waffle iron's instructions.
To assemble

Place sliced avocado on the waffles, season with salt and pepper. Spoon hollandaise sauce over the avocado. Garnish with chopped parsley and smoked paprika.
