Today, I bring you my easy one bowl chocolate cake. A deliciously moist and fluffy chocolate cake with a rich thick chocolate glaze.
This recipe is vegan, gluten-free and refined sugar-free. It’s very easy to make with basic ingredients. The cake batter can be made in two 6-inch pans, loaf pan or 6 mini bundt cakes.
Easy one bowl chocolate cake (vegan, gluten-free & refined sugar free)
- 2 cups gluten free flour or regular flour
- 1 1/4 cups unrefined coconut sugar i used coconut sugar from Bigtreefarms or raw cane sugar
- 1/2 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 cup almond milk
- 3/4 cup water
- 1/2 cup + 2 tbsp canola oil
- 1 tbsp white vinegar
- 1 cup dark chocolate
- 1/4 cup coconut oil
Preheat oven to 180 celsius. Greased the loaf pan and set aside.
In a mixing bowl, sift flour. Add cocoa powder, sugar, baking powder, baking soda and mix well.
Add wet ingredients into dry and mix until smooth. Pour batter into a greased loaf pan. Bake for 45-50 minutes or until a butter knife through the center and comes out clean.
Let the cake cool for about 10 minutes in the pan, then turn the cake out onto a plate.
Finely chop the chocolate into small pieces. Transfer to a medium glass microwave-safe bowl. Microwave for 30 seconds, stir, and repeat until chocolate completely melted. Add coconut oil and mix well.
Pour the chocolate glaze over the cake and use a spoon or spatula to spread it around.
