You probably remember my raw peanut butter cookies I posted awhile ago on Instagram. I made a small change to the recipe, it’s even better and i can’t wait to share the recipe with you!
These raw peanut butter protein cookies are OIL-FREE, SUGAR-FREE, GLUTEN-FREE and SUPER delicious! They are a great way to increase your protein intake. Just one serving of this cookie can add about 5 grams of protein into your day. You can eat them for breakfast, dessert, as a snack, to fuel up before a workout or refuel after a workout!
They take less than 20 minutes to make with just 6 ingredients. I always double the recipe and freeze them for our pre and post-workout snacks. Keep them covered in the refrigerator up to 1 week or in the freezer up to 1 month. Hope you like this recipe and will give it a try soon. 🙂

Peanut butter protein cookies (Raw, Vegan, Sugar-free, oil-free and Gluten-free)
Ingredients
- 1 cup dates pitted
- 3/4 cup gluten-free oat flour or rolled oats finely grounded
- 1/4 cup vanilla vegan protein I used @tropeaka
- 1/4 cup sugar-free peanut butter
- 1/2 tsp vanilla, optional
- pinch of sea salt, optional
- 1/3 cup melted dark chocolate
Instructions

In a food processor, add dates, vanilla and peanut butter and process until smooth. Then add the oat flour, protein powder, and salt and process until the mixture starts to form a dough. If it doesn't seem to come together, add another tablespoon or two of peanut butter and process again.

Form the dough into balls and place on a sheet of parchment paper. Press each ball gently with a fork to make the classic peanut butter cookie criss-cross pattern. Place in the freezer for 5 minutes to set.

Dip the cookies in chocolate glaze about halfway, let excess drip off, and place back on parchment-lined pan. Back in the freezer to set about 5 minuets. Enjoy! .
