These are my absolute favourite spelt pancakes. They are so light, fluffy and delicious, perfect for weekend breakfast or brunch.

Vegan spelt pancakes
- 1 1/4 cups organic white spelt flour @ceresorganics
- 1/2 tbsp baking powder
- 2 tbsp maple syrup
- 1 tbsp coconut oil @ceresorganics
- 1/2 tbsp apple cider vinegar
- 1 tsp vanilla bean
- 1 cup unsweetened soy milk
Combine spelt flour and baking powder. In a large bowl add coconut oil, milk, maple syrup, vanilla bean, apple cider vinegar and mix well.
Heat coconut oil in a pan. Cook pancake for a couple of minutes until it starts to bubble. Then flip and cook through for another 2-3 minutes. Repeat until all the batter is used. Served warm with maple syrup and red currants. Enjoy! .
