Super moist and tender vegan orange pound cake flavored with freshly squeezed orange juice and orange zest. Coloured with organic orange carrot supercolour powder from suncorefoods. Easy recipe that uses non dairy yogurt to get that perfect texture. No egg replacer and vegan butter required!
Vegan orange pound cake
- 2 1/4 cups all purpose flour
- 1 cup sugar of choice
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 3/4 cup non dairy yogurt
- 3/4 cup freshly squeezed orange juice
- 1/2 cup coconut oil
- 1/4 tsp salt
- Zest of 1 orange
- 1 tbsp organic orange carrot supercolour powder
Preheat oven to 180 celsius. Greased the loaf pan and set aside.
In a mixing bowl, sift flour. Add supercolour powder, sugar, baking powder, baking soda, salt and mix well.
In a separate bowl combine orange juice, orange zest, oil, yogurt. Add wet ingredients into dry and mix until smooth. Pour batter into a greased loaf pan. Bake for 50-55 minutes or until a butter knife through the center and comes out clean.
Let the cake cool for about 10 minutes in the pan, then turn the cake out onto a plate.
