
Strawberry yogurt tart. The perfect dessert for Summer!! Crisp pastry crust and strawberry yogurt filling. A delightful dessert tastes like summer.
Fresh berries and yogurt are my weakness and this tart is one of those recipes that I will make again and again with different berries! Hope you’ll like it 🙂

The filling is a mix of strawberry puree, coconut cream and dairy-free yogurt, thickened with a little agar powder. And for the crust, i used a mix of gluten-free oat flour and all purpose flour, coconut oil and sweetened with coconut nectar.

Strawberry yogurt tart
A delightful strawberry yogurt tart tastes like summer. This recipe is vegan, gluten-free and refined sugar free.
Ingredients
Crust
- 1 1/4 cups gluten free oat flourÂ
- 1/2 cup all purpose gluten free flourÂ
- 2 tbsp coconut nectar or maple syrup
- 4 tbsp coconut oil or vegan butter (more if needed)
- 1/2 tsp vanilla bean extractÂ
- pinch of salt
Strawberry yogurt fillingÂ
- 1 cup fresh strawberries
- 1 cup dairy free yogurt room temperatureÂ
- 3/4 cup full fat coconut milk
- 2 tbsp freshly squeezed lemon juiceÂ
- 1/4 cup pure maple syrupÂ
- 1/2 tsp vanilla bean extractÂ
- 2 tsp agar agar powder
- 1-2 tsp hibiscus flower powder for the colour @suncorefoods
Garnish
- Fresh strawberries, red currants, raspberries, grapes, and sage.
Instructions

Preheat oven to 180 degrees celsius. Grease a rectangle tart tin (13.5” inch). Set aside.Â

In a food processor, add crust ingredients and pulse to combined (if mixture doesn’t come together, add a tablespoon of coconut oil) You should get a moist mixture that can be easily moulded. Firmly press into bottom and up the sides of tart tin. Bake for 15 minutes until crust is golden brown. Transfer to a wire rack and let it cool.

Add strawberries in a blender. Blend into a puree. Add lemon juice, blend it again. Strain juice through a mesh sieve. Set aside.

In a saucepan, bring coconut cream to a boil. Add Hibiscus flower powder (if using), agar-agar and stirring constantly until agar completely dissolve. Then lower the heat and add in strawberry mixture, maple syrup. Let simmer for 1 minute. Turn off the heat and allow mixture to cool slightly. Whisk in yogurt and vanilla. Pour mixture into the tart. Chill in fridge for at least 4 hours to set.Â
