
My all time favorite Lemon pound cake recipe made with fresh lemons and coconut yogurt. It’s so moist and full of delicious lemon flavor and easy to make. If you love lemon cakes, you’ve gotta try this! 🙂

Lemon Pound Cake (Vegan)
Ingredients
Wet ingredients
- 1/2 cup freshly squeezed lemon juice
- 3/4 cup coconut yogurt
- 1/2 cup coconut oil
Dry ingredients
- 2 1/4 cups all purpose flour
- 1/2 cup sugar of choice
- 2 tsp baking powder
- 1 tsp baking soda
- 1 lemon zest
- 1/4 tsp turmeric powder
- 1/4 tsp sea salt
Instructions

Preheat oven to 180 celsius. Greased the loaf pan and set aside.
In a mixing bowl, sift flour. Add sugar, baking powder, baking soda, salt and mix well.

In a separate bowl combine lemon juice, lemon zest, oil, yogurt and turmeric powder. Add wet ingredients into dry and mix until smooth. Slowly pour batter into a greased loaf pan. Bake for 55 minutes or until a butter knife through the center and comes out clean.
Let the cake cool for about 10 minutes in the pan, then turn the cake out onto a plate.Â

This cake is amazingly delicious! I used coconut sugar because that is the sugar I mainly what I cook with now so the color was slightly more caramel than above. The batter, for some reason was very stiff and not pourable at all so I ended up adding 1/2 cup of oat milk. But other than that I stuck to the recipe and we all loved it.
