Satisfy your mango craving with this moist, soft and sweet mango yogurt cake with passion fruit glaze. This recipe is so easy to make with simple ingredients that you will find in your kitchen.
Mango yogurt cake with passion fruit glaze
- 250g Fresh mango purée
- 1/2 cup dairy free yogurt
- 100g dairy free butter
- 1/4 cup unsweetened soy milk
- 1 cup sugar of choice, 200g
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 1 1/2 cups cake flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 passion fruit pulp
- 1 1/4 cups powdered sugar, 125g
Preheat oven to 170 celsius. Grease a 1 pound loaf pan (8.5 x 4.5 x 2.75 inch) and set aside.
Sift flour. Add sugar, baking powder, baking soda, salt and mix well. Set aside.
In a stand mixer, add the soften butter and sugar and mix on low speed for about 1 minute. Add in mango purée, room temperature yogurt, milk, vanilla and mix until smooth.
Add in dry ingredients, scraping the bottom and sides of the bowl with a silicone spatula as needed. Mix on low until smooth. Transfer batter into a greased loaf pan. Bake for 55 minutes to 1 hour or until a butter knife through the center and comes out clean. Let the cake cool completely in the pan, then turn the cake out onto a plate.
Combine glaze ingredients and whisk until smooth. Pour it over the cake and serve.
