Chocolate granola with cocoa nibs (vegan, gluten-free & refined sugar-free)

Ingredients

  • 2 cups gluten-free rolled oat
  • 1 cup sliced almond
  • 3 tbsp cacao powder
  • 1/2 cup coconut oil melted
  • 1/2 cup maple syrup
  • 2 tbsp cocoa nibs @suncorefoods
  • 1 tbsp chia seeds @suncorefoods

Instructions

  1. Preheat oven to 180c. In a large bowl combine rolled oats, sliced almonds chia seeds and cocoa nibs. In a small bowl, add melted coconut oil, maple syrup and cocoa, mix until combined. Pour cocoa mixture over the oat mixture and mix well.

  2. Turn granola onto a rimmed cookie sheet and bake for 20 mins, tossing occasionally. The granola will dry out and crisp up while it cools. Store in an air-tight container until ready to use.
