Strawberry poppyseed pancakes

Fluffy vegan pancakes made with only 7  ingredients. They are vegan, gluten-free and refined sugar free.

  • 1 cup gluten free all purpose flour
  • 2 tbsp unrefined sugar
  • 1 tbsp baking powder
  • 1 tbsp poppyseed
  • 1 cup unsweetened soy milk
  • 1 tbsp apple cider vinegar
  • handful of strawberry, diced


  1. In a large bowl combine dry ingredients, pour in milk and vinegar and mix well. Gently fold in diced strawberry.
  2. Heat coconut oil in a pan. Pour or scoop the batter into pan (approximately 1/4 cup) and cook for a couple of minutes until it starts to bubble. Then flip and cook through for another 2-3 minutes. Repeat until all the batter is used.

  3. Serve warm with choice of fruits and syrup. Enjoy.
