Preheat oven to 180C.
In a large bowl, whisk together oil and maple syrup and vanilla. Add oats, nuts, chia seeds, salt and cinnamon. Turn out onto a rimmed cookie sheet and bake for 15 mins or until golden, tossing occasionally.
Remove from the oven and toss in the dried fruits (if using) while the granola is still warm. The granola will dry out and crisp up while it cools. Store in an air-tight container until ready to use.
