Almond coconut cookies (vegan, gluten-free & refined sugar-free)

Crispy outside and soft centre cookies loaded with healthy ingredients. Easy one bowl recipe, takes less than 20 minutes to make. 

Servings 12 cookies


  • 1 1/2 cups almond meal
  • 1/4 cup coconut flour
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 tsp baking soda
  • 1 tsp vanilla bean extract
  • 1/2 tsp salt


  1. Preheat oven to 180 celsius.

  2. In a large bowl, mix together all the ingredients. 

  3. Using a small cookie scoop, shape the dough into 12 1-inch balls and place cookies on baking sheet lined with parchment paper, or silicone mat. Flatten the cookie dough balls.

  4. Bake for 12-15 minutes, or until golden brown. The cookies will be quite fragile as they come out of the oven, so cool for about 5 minutes on the baking sheets, and then transfer onto wire rack to cool completely.
