Easy one bowl chocolate cake (vegan, gluten-free & refined sugar free)

A deliciously moist and fluffy chocolate cake with a rich thick chocolate glaze.


  • 2 cups gluten free flour or regular flour
  • 1 1/4 cups unrefined coconut sugar i used coconut sugar from Bigtreefarms or raw cane sugar
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup almond milk
  • 3/4 cup water
  • 1/2 cup + 2 tbsp canola oil
  • 1 tbsp white vinegar

chocolate glaze

  • 1 cup dark chocolate
  • 1/4 cup coconut oil


  1. Preheat oven to 180 celsius. Greased the loaf pan and set aside.

  2. In a mixing bowl, sift flour. Add cocoa powder, sugar, baking powder, baking soda and mix well.

  3. Add wet ingredients into dry and mix until smooth. Pour batter into a greased loaf pan. Bake for 45-50 minutes or until a butter knife through the center and comes out clean.

  4. Let the cake cool for about 10 minutes in the pan, then turn the cake out onto a plate. 

chocolate glaze

  1. Finely chop the chocolate into small pieces. Transfer to a medium glass microwave-safe bowl. Microwave for 30 seconds, stir, and repeat until chocolate completely melted. Add coconut oil and mix well. 

  2. Pour the chocolate glaze over the cake and use a spoon or spatula to spread it around.
