Banana spelt waffles (vegan & refined sugar-free)

Healthy vegan waffles made with spelt flour banana. They are fluffy, light and crispy with tender and chewy middles. So so delicious!

Ingredients

  • 1 1/2 cups spelt flour
  • 1 1/2 tbsp baking powder
  • 2 tbsp unrefined coconut sugar
  • 1 ripe banana
  • 1 cup almond milk
  • 3 tbsp coconut oil
  • 1 tsp vanilla bean extract
  • Pinch of salt.

Instructions

  1. Combine milk, coconut oil, banana and coconut sugar in a blender and blend until very smooth. Add in flour, baking powder, salt, and vanilla and blend until batter is thick. Scrape down the sides of the blender with a spatula if necessary to ensure that no flour sticks to the walls of the blender.

  2. Pour batter onto your preheated waffle iron and cook according to waffle iron's instructions. Serve warm with your choice of fruits. Enjoy!
