Black bean brownies (vegan, gluten-free, grain-free, & oil-free )

Ingredients

  • 2 cans black beans drained and rinsed @ceresorganics
  • 1/4 cup nut butter, i used cashew nut @ceresorganics
  • 3/4 cup coconut sugar @ceresorganics
  • 1/4 cup non dairy Yogurt
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp vanilla bean extract

Topping

  • 200g dark chocolate
  • 1-2 tbsp pure maple syrup

Instructions

  1. Preheat oven to 180 celsius and prepare a baking pan by lining it with a sheet of parchment paper, leaving a few inches of overhang on the sides to allow for easy removal. Set aside.

  2. Add all the ingredients except for the dark chocolate to a food processor and process on medium-high until the batter becomes smooth and creamy, taking care to scrape down the sides if necessary.
  3. Pour the batter into your prepared baking pan, using a spatula to distribute it evenly. Bake for 35 mins or until a toothpick comes out clean. Let cool completely. Let it cool. 

  4. Melt dark chocolate in microwave. Heat it on medium high for about 30 seconds to start with. Remove from the microwave and stir. Repeat heating at shorter intervals, 15 to 20 seconds, stirring in between, add maple syrup and stir until the chocolate is completely melted and has a smooth consistency. 

  5. Pour the chocolate over the brownies and use a spoon or spatula to spread it around. Refrigerate for 1 hour before slicing.
