Homemade granola (Vegan, gluten-free & refined sugar free

This granola is full of flavor and addictive. Made with healthy oats, nuts, chia seeds, coconut oil and It’s naturally sweetened with maple syrup. 


  • 2 1/2 cups gluten-free rolled oats or regular rolled oats
  • 1 cup mixed nuts i used pecans, almonds, hazelnuts and cashews
  • 1/2 tsp ground cinnamon
  • 1 tbsp chia seeds
  • 1/2 tsp salt
  • 1/2 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 2 tsp vanilla extract


  1. Preheat oven to 180C.

  2. In a large bowl, whisk together oil and maple syrup and vanilla. Add oats, nuts, chia seeds, salt and cinnamon. Turn out onto a rimmed cookie sheet and bake for 15 mins or until golden, tossing occasionally.

  3. Remove from the oven and toss in the dried fruits (if using) while the granola is still warm. The granola will dry out and crisp up while it cools. Store in an air-tight container until ready to use.
