Sweet potato waffles with vegan hollandaise sauce

These sweet potato waffles have the crisp crust and fluffy interior like traditional waffles, but the sweet potatoes provide a deeper and more flavour. They are great with the vegan hollandaise sauce and sliced avocado. 


Sweet potato waffles

  • 200g sweet potatoes cooked
  • 1 cup spelt flour
  • 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsweetened soy milk
  • 1 tbsp coconut oil

Hollandaise sauce

  • 1/2 cup cashews soaked
  • 1/2 cup unsweetened soy milk
  • 1/2 tbsp mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp nutritional yeast
  • 1 tbsp maple syrup
  • 1/2 tsp turmeric
  • 1/2 tsp smoked paprika
  • 1 tsp salt


Make the hollandaise sauce

  1. Soak cashews with warn water for 2 hours or overnight. Drain and rinse. Place the cashews in a blender with the rest of the ingredients. Blend until smooth. (add a bit more milk, If you desire a thinner sauce). Set aside.

Sweet potato waffles

  1. Preheat waffle iron. Place all of the ingredients into a food processor, blending until smooth and fully combined.

  2. Spoon batter into your preheated waffle iron and cook according to your waffle iron's instructions.

To assemble

  1. Place sliced avocado on the waffles, season with salt and pepper. Spoon hollandaise sauce over the avocado. Garnish with chopped parsley and smoked paprika.
