Vegan spelt pancakes


  • 1 1/4 cups organic white spelt flour @ceresorganics
  • 1/2 tbsp baking powder
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil @ceresorganics
  • 1/2 tbsp apple cider vinegar
  • 1 tsp vanilla bean
  • 1 cup unsweetened soy milk


  1. Combine spelt flour and baking powder. In a large bowl add coconut oil, milk, maple syrup, vanilla bean, apple cider vinegar and mix well. 

  2. Heat coconut oil in a pan. Cook pancake for a couple of minutes until it starts to bubble. Then flip and cook through for another 2-3 minutes. Repeat until all the batter is used. Served warm with maple syrup and red currants. Enjoy! .
